Gunther tends to want to charge in, and fires up easily. Hermione struggles to keep him in check sometimes during a pokemon battle when he just wants to do things his own way because his way is obviously better. He mostly went with Hermione because he really wants to battle high level pokemon and get stronger - mostly for pride than anything else.

Hermione caught Gunther while on the ferry from New Bark to Pallet Town. Gunther really didn't give her a choice - he practically hid himself in her backpack and followed her around the ferry until she finally gave in in exasperation and tossed a ball towards him.
